T Bone Steak Recipe

This beef steak is widely known as a "man's steak" (no knife required for eating). The T-Bone steak consists of a T-shaped bone with meat on each side. The larger side contains meat from the strip loin (Strip Steak), whereas the smaller side contains the beef tenderloin (Filet Mignon). T-Bones are generally considered one of the best valued steaks available, because of their large size and the fact that they contain meat from two of the most prized cuts of steak.  -BBQ Pit Boys

Recipe:
1"-2" thick T-Bone Steak
Kosher, Sea, or Chef's Salt
Olive oil

Preheat your grill to high heat or glowing red coals. Now apply salt and pepper to both sides of the steak, which should be at room temperature. Place the meat over the coals to sear, and do not move for 2-3 minutes, depending on the thickness of the cut. Flip the steak and repeat the sear. Move to the opposite side of the coals and cover the grill to finish cooking the steak to your desired "doneness'. Covering the BBQ grill briefly will allow you to cook the steak to medium or well done without burning or flare-ups. Test for doneness with your finger, or thermometer.
