Travis Estes Barbecue Throw-Down

Here is a picture of me taking the judges steak up at the St. Louis Pork Steak Throw-down (@ the Piccadilly). I combined several Pitboy's techniques, rub, and dippin' sauce (tweaked a little to make it my own) and ended up 2nd. But to be fair - the team that one 1st pulled up in a smoker rig twice the size of my car, had a team of at least 6 and came from a bbq restaurant here in town that's been featured on Food Network twice. My buddy and I had a single Weber kettle and about 20 hours of watching BBQ PitBoys and that was it!
